Finca Sabanilla is what happens when two of Costa Rica’s best coffee producers decide to experiment with never-seen-before techniques, utilizing the latest technology whilst being backed by rigorous scientific process.
Oscar and Francisca Chacon oversee all stages of the coffee production with unwavering passion and attention to detail. Their cherries are harvested only when the sugar content within the cherries reach exactly 22%. Then once mechanically de-pulped to conserve water at the Chacon’s own mill Las Lajas, the lot undergoes a variation on natural processing called ‘Perla Negra’ (Black Pearl). This involves sun drying for 10 days while rotating constantly, before being finished on raised beds for 2-3 days.
We are in awe of the Chacon’s dedication to excellence in all facets of coffee production, as well as their commitment to producing ethical, sustainable, and absolutely delicious coffee.
